🫩 UNDER THE WEATHER: That’s how I feel today. The allergies are driving me to distraction.

🟣 BREAKFAST: I experimented with breakfast again. I preheated the oven to 350°. I mixed two cups of pancake mix with four eggs and a can of applesauce. I sprayed a loaf pan with butter flavored oil, added the batter and then baked for about forty-five minutes at 350°. After thirty minutes the top was beginning to brown while the center was not for baking. I made a loose tent of foil and continued calling. Once a skewer to the center came out clean I removed from the oven and let it cool for a while before cutting it into slices. Served it with butter and syrup.

🟣 LUNCH: Our order of dried beef arrived today so, I made chipped beef gravy over biscuits and mashed potatoes. We also had peas and cheese and strawberries.
